Elegant nose, with sappy oak. Fresh, floral notes (lily, jasmine), original grain of tannins. Nice unfolding, without heaviness Mainly manual harvest carried out in the middle of the day to ensure a hot start to fermentation. The grapes are harvested at maturity to ensure flesh and consistency. Controlled fermentation in stainless steel vats. The whole is raised in demi-muids which, by its volume (6hL), attenuates the intensity of the wood. The cooperage is Burgundian, always with the particularity of bringing sappy notes, rather than toasted in order to maintain the aromatic freshness of the Grenache as well as a beautiful structure and consistency. This wine is kept until spring on fine lees, ensuring a reducing medium. It will thus be sulphited late.
